Ooooo. Chocolate ravioli



To say that I like making ravioli would be an understatement.  I really do think that these special little packets of flavor are just the most interesting and unique things that a home cook can make to demonstrate ability, creativity and ingenuity.  And they taste good.  Yeah, sure, most people get their first taste of ravioli from a can of Chef Boyardee.  Pretty sad, and certainly not enough to promote a life long love of this unique food product.  When you taste some great home made ones, something where the stuffing is anything other than bland ground meat or Ricotta and parsley, then it certainly feeds the imagination.  I think that my real love for these little guys began on the occasion of my wedding to my first wife, the second time.  (You figure it out) And at the dinner that was thrown for us at this wonderful restaurant in Montrose CO, I had lobster ravioli.  I was in heaven.  Since then, I have made many varieties of ravioli, for myself personally, for classes that I have taught at my store in Austin, classes for individuals here in Arizona, and as commercial products for sale through the business I had previously, Gourmet Texas Pasta.  Some of the ones we made there for sale were Red Pepper pasta stuffed with Scallops, Bacon and Chives; Chili Cilantro pasta stuffed with Pork cooked in Beer with chilies; Tomato, Basil Garlic pasta stuffed with Fresh Italian Herbs with four cheeses; Mushroom pasta stuffed with portobello mushrooms sauteed with Sherry; and the big seller, chocolate pasta stuffed with chocolate ganache and pecans.  

Well I am doing a little catering for my sister's monthly meeting of her sorority next week and so I told her I would do something special for her.  I have to make it all on Sunday, and she can just reheat it all.  Whole wheat rolls, Caprese Salad, white mushroom lasagna, and of course, chocolate ravioli.  So, here is the recipe I will use to make them, I have made them plenty of times, but have just never taken any pictures.  I will Sunday though, I need to start taking more picts when I do stuff like this.  

Take a bag of mini chocolate chips and mix in a large bowl with a half cup cream and half cup chopped pecans.  Set aside.  In mixer of food processor, put in 2 cups organic unbleached unbromated all purpose flour, 3 eggs, a half cup bittersweet cocoa, and three or so tablespoons vanilla.  Now, comes the sweetener.  I prefer honey, or organic evaporated cane juice.  About a third cup.  If you aren't into the natural thing, then cane sugar.  Oh well.   Whizz or mix and add enough water so that with the machine on, it forms a ball.  Take the ball out and cut it into 4 pieces.  Using a pasta roller and lots of flour, roll the dough out into sheets down to the second to thinnest setting.  Make sure well dusted with flour and fold into small sections and put aside, covered with a damp towel.  Repeat for remaining three sections.  Place the sheet of dough onto the ravioli press and push the nipple section into the press.  Place a teaspoon of the chip mix into the dimple of the dough on the ravioli maker.  Brush the edges with water, then place another piece of dough on top.  Using a rolling pin, press down and cut and seal the edges.  Remove from the press and place on a rack in front of a fan.  Let them air dry for a while and then you can put into a bag and freeze the way they are, or cook right away in boiling water.  Cook for three minutes, then serve with the sauce.

Sauce, easy, melt 3 ounces in a cup and a half of half and half.  Add some vanilla, and pour over the cooked ravioli.

Magic Beans!!!!!



I see some of the ads on TV and in magazines frequently that have these huge glaring claims for magical weight loss.  “Clinically Proven” weight loss with no changes to your eating or lack of exercise habits.  These always get me, I mean I think at this time that everyone, well, most every relatively intelligent person, understands how weight loss actually works.  There are relatively few tricks to make it easy.  Sure, in the early part of the last century you could buy diet pills that contained the viable eggs of tapeworms, those worked.  Methamphetamines work, but the side effects are rather extreme.  And the fake fat stuff works, because the horrific diarrhea it causes along with the blocking of the absorption of nutrients increases weight loss.  But none of those things are actually good for the body.  Of course we all know that real true weight loss comes from reducing caloric intake, increasing the complexity of those calories, and increasing the number of calories burned; exercise. 
However, there are a few cheaters out there.  Things that really and truly do help your body burn more calories without doing anything extra like exercise.  Not the magic promised on TV, but a little bit of help.  And believe it or not these things have lots of other benefits as well, not the least of which is just that they plain taste good.  The magic beans are, Herbs and Spices.  I know it sounds weird, but it is very true.  Here are some of the top performers and why they work for you.

  1. Ginseng: This root, especially Panax ginseng, is well known for the ability to boost energy and speed metabolism.
  2. Cayenne and Black Pepper:  Wow, these both are spectacular for doing a jumpstart to your system.  Besides the high Vitamin C content of Cayenne, these two have been shown to boost metabolism by up to 5%.  That means an increase in fat burning capability of nearly 15%.  And piperin in Black Pepper has been shown to block the production of new fat cells. 
  3. Cinnamon: Good for metabolism, but its true benefit lies in the ability for it to increase glucose metabolism by up to 20 times.  This helps to reduce blood sugar levels and to improve the body's ability to regulate blood sugar.  All in all, a great thing for losing weight.  
  4. Mustard:  Eat a lot of mustard, or do as I do, and take a teaspoon of ground mustard seeds every morning.  Mustard has been shown to boost metabolic rate by 20%, an easy way to burn and extra 35 to 40 calories PER HOUR for hours after eating them.  Eating a lot of mustard made naturally and not using distilled white vinegar (which is very bad for you) helps.  
  5. Ginger and Turmeric:  Both root spices, and both known to have thermogenic properties, they relax the intestinal tract and have appetite suppressant effects.  Plus both are known to have proven antibacterial properties and are great for taking during flu season.  
  6. Cardamom:  Good stuff, a little boost in metabolism but one of my favorite sweet spices.  I love it in coffee, peach soup, plain yogurt with a bit of honey, and mixed into any cookie recipe.  The Ayurveda is an ancient system of medicine set forth nearly 2500 years ago.  It lists many of nature's products and how they help the human body exist and to do it well.  Cardamom is mentioned many many times and is a favorite of Indian cooking with good reason.  
Try adding some of these cool things to your diet.  I buy many of these spices in bulk and load them into gelatin capsules, and some I just buy commercially made ones.  Does it help, well, I don't know.  I have lost about 40 lbs since August, so I think maybe so.  But whatever you do, just adding them to your culinary achievements will make life more exciting.

the war on influenza takes casualties. AGAIN

In Missouri, as in other places across the county, health care workers are being threatened with termination if they refuse to get the flu vaccine.  Despite the evidence that the vaccine gives very little protection against most flu viruses or flu-like viruses. Oh yeah, there is a difference.  There are an estimated 200 hundred or more different viruses that cause flu like symptoms.  The flu vaccine itself generally targets Influenza A and B strains.  And each year, most manufacturers pick another strain then add it to the mix hoping that it will be the predominate variety for that year.  What that means is that the vaccines being manufactured today are generally about 10% effective. Given that the numbers of side effects and severity are increasing dramatically throughout the world, I don't think that there is enough evidence that this vaccine should be required.  In fact, isn't it our right as Americans to refuse to take something that we suspect may harm us?  I believe this calls falls under the heading of freedom of religion.  I believe that manufacturers that worship money above all else, that produce a product that is not thoroughly tested, that has specific proven detrimental side effects and that is NOT effective against the stated purpose: is against my belief that I want to live life.  Freedom of religion for us both.  They make money, except on me, and I get to live.

I think I may have mentioned in my blog elsewhere about my bout with Guilliane-Barre Syndrome.  GBS.  Back when I was living in an area that was sprayed with Agent Orange every fall in order to harvest cotton, I got relatively ill from the stuff and came down with pneumonia.  When at my primary care doc's place, he suggested that I get a pneumonia and flu vaccine.  So I did.  About a week later I began to feel horrific tingling and pain in my arms and legs.  In fact, it became so debilitating that I could not work and took several weeks off work as could not do anything at all.  Went to two neurologists and they were of no help, in fact one told me that since I have asthma, that if I was hyperventilating that I was getting my blood oxygen above 100% and the high oxygen content could, COULD, cause tingling and numbness.  Yeah right.  I had GBS symptoms, of course not a significant number of people get that particular problem.  But the numbers are on the rise, right along with the numbers of people getting vaccinations.  I was lucky, within 4 weeks, the symptoms went away, and I was not paralyzed permanently as so many victims are.  

The basic problem with all of this is that we should have the freedom to choose what goes into our bodies.  It isn't just about labeling of genetically modified foods that more and more research is showing are harmful to us; but it is about basic stuff like our healthcare.  Yeah, the numbers of children with autism in the US are astronomical and coincide with the numbers of vaccinations that US kids receive as opposed to children in other industrial nations.  Maybe it is because vaccines are not the holy grail that the manufacturers want us to believe that they are.  Vaccine manufacturers have been granted immunity from liability by the US government.  So if you are one of the unlucky growing numbers of people that are stricken with total body paralysis from GBS, or in one of a huge list of complications from flu vaccines, you can't sue the manufacturer.  EVER!  Tough shit.  Lump it, they made money on your REQUIREMENT to get a vaccine that health authorities across the world are beginning to recognize is unsafe.

November 2011 issue of "Journal of Virology" there is an article that is confirming that seasonal flue vaccines weaken the immune systems of children and increase their chances of getting sick from viruses not included in the vaccine, which is to say, all but three strains. A Cochrane Database Review—which is the gold standard for assessing the scientific evidence for the effectiveness of commonly used medical interventions – concluded:     
"Influenza vaccines have a modest effect in reducing influenza symptoms and working days lost. There is no evidence that they affect complications, such as pneumonia, or transmission. WARNING: This review includes 15 out of 36 trials funded by industry (four had no funding declaration). An earlier systematic review of 274 influenza vaccine studies published up to 2007 found industry funded studies were published in more prestigious journals and cited more than other studies independently from methodological quality and size. Studies funded from public sources were significantly less likely to report conclusions favorable to the vaccines.
The review demonstrated that reliable scientific evidence confirming that influenza vaccines are effective is thin and there is plenty of reason to suspect that there may be a manipulation of conclusions when the studies are funded by drug companies. The content and conclusions of this review should be interpreted in light of this finding."
What does all that mean.  Well it means that when the guys that make the stuff show the world that their stuff is good, then even though other guys who spend their own money to try to reach the same conclusion about the stuff, they CAN'T.  Does it mean that they are lying?  In order to make tons of money, why wouldn't they?  After all, YOU can't sue them if we find out they really are lying about it all.

What do you mean ChefRoy, I CAN"T keep a trash bag in my freezer!

It's not a real trash bag.  It is just a bag that you keep in your freezer, and you keep, well, you keep trash in it.  Everybody should have one.  Anyone that likes to cook, and of course all those that need to learn to cook to avoid the poisons and toxins so prevalent in processed foods; need to get themselves a trash bag in their freezer.  Have you ever wondered why the foods in better restaurants tastes soooooooo much better than stuff in cheap restaurants or out of boxes?  Well the answer is simple, trash. 

In finer restaurant all around the world, chefs, sous chefs, line preps, and commies take fresh produce, meats, poultry, and seafoods and then take all those things and prepare real food.  And in that process, a lot of stuff is set aside as not being usable.  Tops of celery, ends and skins of carrots, onion skins, bones, shrimp shells, all that stuff usually gets tossed into the trash in homes all across America and then goes off to landfills to make methane gas.  At least in progressive communities.  In a few homes, the stuff goes into compost.  In my house, it goes into a trash bag in the freezer for use in making the incredible flavor enhancer used in finer restaurants everywhere, stock. 

Stock is one of the simplest things to make in the kitchen, yet the impact on the flavor of just about anything that you cook yourself in your kitchen is dramatic.  I think anyone that has read my blog or my cooking website, www.AustinHealthyCooking.com  knows that I love brown rice.  When you make your rice, beans, pasta, sauces, gravies, and most anything that starts with a liquid, when you use stock, you are adding huge amounts of flavor.  And right now, is the time to think about it since you all have that turkey carcass sitting in the fridge.  Peel off most of the meat, and then crack it into pieces and throw it into a big stockpot.  Add water to cover, then throw in stuff from your trash bag.  Carrots, celery tops, onion skins, etc.  Then add 20 or so peppercorns, 5 bay leaves, a sprig of rosemary and any pieces and stems of fresh herbs you have used.  Bring to a boil, reduce to a simmer, and let it stew away for a couple of hours.  Strain it all and when cool, put it into plastic bottles and freeze some, and use some right away for making stuff like Turkey Tetrazzinni, or Turkey Pot Pies, or Green Turkey Chili stuffed into Turkey stock flavored Tamales.  Or use your imagination.  Hey, you gots a brain, use it or lose it!

Piloncillo Chipotle sauce with Goat Cheese Ravioli

Okay, one of the things that I am most proud of in my life, other than my son, is one of the products in my last company, Foods of the Gods.  It was Goat Cheese with Piloncillo Chipotle Salted Caramel Sauce.  To eat the stuff, well, it was an incredible experience in taste.  One that I think that most of the people that tasted it and then bought it, (over 90%) thought of it as well.  I want to do a little something as an appetizer for an event coming up with some friends, and I thought about what I could do with those flavors to make it more delicious, and easier to serve.  And I came upon this idea.  Goat cheese ravioli and then cover them with that same sauce.  They are spectacular.  And they freeze well, and they are easy to thaw and serve at just room temperature.

Make the sauce first.  Go to the Mexican food section of your grocery store, and pick up two piloncillo cones.  In a sauce pan, heat two cups water with the two cones.  Cook until the cones melt, and continue to boil until very thick.  Add a 12 ounce can of dulce de leche.  Take 4 canned chipotle peppers from a small can of chipotles in adobo.  Place in a blender with a half cup of water and whizz until fine.  Add to the sauce pan along with 2 tablespoons sea salt.  Heat through.

Make the raviolis.  Take out 8 ounces goat cheese and allow to come to room temperature.  Into the bowl of your mixer or a food processor, put in two cups unbleached unbromated organic all purpose flour, and one cup of durum wheat flour.  Add a quarter cup honey and two eggs.  Whizz or mix and add enough water so that with the machine on, it forms a ball.  Take the ball out and cut it into 4 pieces.  Using a pasta roller and lots of flour, roll the dough out into sheets down to the second to thinnest setting.  Make sure well dusted with flour and fold into small sections and put aside, covered with a damp towel.  Repeat for remaining three sections.  Mix the goat cheese with a quarter cup of the sauce.  Place the sheet of dough onto the ravioli press and push the nipple section into the press.  Place a teaspoon of the goat cheese into the dimple of the dough on the ravioli maker.  Brush the edges with water, then place another piece of dough on top.  Using a rolling pin, press down and cut and seal the edges.  Remove from the press and place on a rack in front of a fan.  Let them air dry for a while and then you can put into a bag and freeze the way they are, or cook right away in boiling water.  Cook for three minutes, then serve with the sauce.

What's wrong with me?

Hmmmm, what is wrong with me?  Well, if you ask my ex, the answer that you get will be rather lengthy, abusive and all inclusive.  By that I mean that everything that ever went wrong with her life is my fault.  Sigh, she blamed me for rain once.  Oh well, I'm not concerned with all that now, but more about what is wrong with me health wise. Since a friend asked, I thought I would put it all down here.

My problems stem from an overall failure of modern medical science, the government and the proliferation of chemical use in modern farming techniques.  A lot going on here.  Back in the nineties, Julie and I bought a house on a golf course in the middle of broccoli and corn fields.  That was the first year.  The second year, they planted cotton, and did so every year I lived there.  That cotton was sprayed each fall with Agent Orange so the leaves would drop and they could mechanically harvest the cotton with big vacuum machines.  The problem was the cloud of Agent Orange dust that hung over the fields.  My childhood asthma bloomed and I had a lot of problems.  When I moved to Mesa in 2002, things got better.  Sort of, still problems that I didn't have previously.  Then in 2008, I moved into an apartment in Austin that because of the poor service, the kitchen sink leaked a lot of water.  When FINALLY repaired, the wood underlayment was rotting and warping.  The management then agreed to replace the flooring and cut around the sink cabinet and replaced the flooring that was noticeable.  They didn't do anything about the flooring or the cabinet itself where all the water was, and of course all the black mold was growing.  That's when I started to get sick.  Lung problems so bad that I was constantly on prednisone and albuterol nebulizer treatments.  My friend Key took me to a holistic doc in Bee Caves and he did blood tests and allergy tests.  My blood showed that I was lacking in testosterone, so he prescribed a testosterone cream, and also allergy treatments.  A month later I was not any better, and came down with a huge set of six, yep, count them, SIX, blood clots in my lungs.  I found out what a death watch is.  I drove myself to the ER from my doctor's office against his wishes, he wanted to call an ambulance.  My blood oxygen was at 80% and I was a little dizzy.  After the CAT scan, they found the PE's and I spent the night in the ER with a crash cart next to my bed and they moved me right in front of the nurse's station so they could do something should I stop breathing.  Oh well, they pumped me full of steroids and albuterol and I survived.  My brothers and sister drove to Austin and when they went into the apartment, they found the mold in the kitchen.

So, the apartment management moved me to a new apartment, I thought I would get better and hoped it was all over.  It wasn't.  The massive doses of steroids destroyed my left hip and was working on my right one as well as my shoulders, knees, ankles, elbows and wrists.  It is called Avascular Necrosis.  The death of the joints due to steroid use.  Something they don't tell body builders about.  But then those guys don't take the amount I did to survive.  Mine is progressive non-terminating, actually pretty rare.  So, now I have new problems to deal with.  My sinuses became so impacted when living with the mold that I could not smell anything and the pressure in my sinuses was so great that along with the steroids, I could barely focus most days.  I went to an ENT doc and was scheduled to have the roto rooter sinus cleaning surgery but was unable to as I threw another PE the day before the scheduled surgery.  When at the hospital for this one, I started to see a pulmonologist who prescribed a number of drugs to help.  They didn't help though, in fact two of the drugs together inflame the pancreas and can destroy it if taken long term.  Shouldn't the hospital pharmacy have caught that?  I found out about it on drugs.com.  Well, five days of excrutiating pain and I left the hospital against the advice of my doctor.  The hospital people are wrong, your insurance still pays for it all.

So, now I have a choice, do the roto rooter or get my left hip replaced, as I am now taking coumadin as a blood thinner to prevent more blood clots, doctors place me in high risk for surgery and they won't do a surgery more than once every six months or so.  I chose hip.  I went off the coumadin, did daily injections of a different anticlotting drug and had the hip replaced.  A month after getting out of the rehab facility, I had another blood clot.  Back to the hospital.  Oh well, I am getting used to them now.  Six months later, I am back to the ENT and he cultures my sinus stuff in preparation for that surgery.  Oops, now I have MRSA in my sinuses.  Must have gotten it while in the hospital, as that is where virtually all people get it.  So, off to the infectious disease doctor and they put a PIC line into my left arm and give me a month's supply of antibiotics to put directly into my artery.  Oh yeah, and I need to eat yogurt everyday because this stuff kills everything in your system.  And rather than have diarrhea every day for a month, they suggest yogurt.  Well it does kill stuff, but not the MRSA.  I still am plagued with that.  But, as I was tired of blowing out huge globs of gross green crap out of my nose that was at times larger than my thumb, I went in for the sinus surgery.  Again, off the blood thinners for this surgery so I won't bleed to death.  A six hour surgery.  I could barely see for a week.  Again, two weeks later, another PE.  I may be used to them, but I don't like them.

So, as my problems continue, I try to live my life, work my business and get some semblance of health.  All to no avail.  My new pulmonologist thinks that all the flour dust in the air of the store is what is causing my lung problems, and sinus as well.  I sold the store.  I never got any better.  So, maybe it is the high mold count in the air there.  I move back to Arizona where we don't have a lot of mold.  And you know what, for the most part, I am better.  Still some sinus problems, but then, I have MRSA infection up there.  So all in all, what has happened is that
1. modern farming techniques irritated my lungs
2. poor maintenance caused mold growth in my apartment
3, same poor cheap maintenance replace the visible evidence but not the source of the mold
4. the mold irritated my lungs and sinuses, the treatment, steroids, destroys your joints
5. one doctor set me up with testosterone cream, which we now know causes blood clots.  I stopped taking that 2 years ago, not sure why I ever took it, i have never had that low T problem.
6. treating the lungs with more steroids opens them up enough so you can breath
7. blood thinners to prevent more blood clots cause your hair to fall out, your skin to become so thin that you bruise super easy, and make your overall health poor.  I stopped taking coumadin 8 months ago, afterall, not taking the T cream anymore
8. when getting a hip replaced, I acquired a sinus infection of antibiotic resistant bacteria MRSA
9.  Trying to do anything to get better, I sold my business, lost most of my money paying for medical procedures that have done little to cure me and everything that has happened to me has disrupted my existence dramatically
10, because my apartment building was owned by the city of Austin, no attorney would attempt to sue the city.  It seems that Texas is a state that is trying to reduce frivolous lawsuits so they allow themselves and all government entities to set limits on their liability.  In this case, 250k.  That is not enough for an attorney to consider to make money.  I tried 14 different ones.

In america today, you can spill hot coffee on your groin and win a million dollars.  If you break into some one's home and slip and hurt yourself on broken glass that you broke, you can sue the homeowner and win a half mil.  But when your life is destroyed by the medical community, the limits of liability and just plain carelessness and stupidity, then I can't get a dime in damages from anyone.  All these problems killed my cat, and have left me penniless and with recurring sinus infections and pneumonia. 

A week before I moved to Phoenix, I emailed my ex and told her I was leaving, so she could stop telling customers, friends, strangers, anyone, all the lies and crap she spouts to everyone about me.  And also that I hoped she had a nice life and was happy.  She emailed me back and expressed her wonderment as to why I was still alive.  I didn't deserve to be.  I take umbrage to that.  I am a good person, I live a good life, simple by some standards, I am honest in my business dealings, love my friends, (a few a lot more than others) and have oneness with the universe and live the life set forth in that belief.  I am at peace with my past, and with my life.  I woke up this morning, that is something that just a few short years ago I had a group of highly skilled nurses and doctors watching me constantly to make sure I did.  Well, thanks to all that helped, and I am not all that upset with all those that did things contrary to my health.  I have achieved oneness.   ooooooohhhhhmmmmmm. 

And now, the opposite, Top Ten things to Add to your diet!

Yesterday I talked about what I personally thought were the top ten things to avoid and in some cases, why.  I think my list is a lot different from most peoples, and most of those that write about food on the internet, ie, Dr. Mercola, and others.  Hey, its my blog, my list.  So poop on you who don't agree with me.  I think though that I have logical arguments for each, and so am happy with my list.  Conversely I have to say that there are good things in the world to eat and should be included into everyone's diet.  And yeah, chocolate should be in there as well. Hmmmm, chocolate gooooood.

Number One:  Brown Rice    This is God's most perfect food.  Good organic brown rice is the staple food of a large percentage of the WORLD.  If you eat it a lot, you won't have dry skin, dandruff, psoriasis, irregularity, and a whole host of problems that plague ANYONE that generally lives on the Standard American Diet; the SAD.  Eat it, it is good for you.

Number Two:  Whole Grains    Not just brown rice, but add any number of other whole grains to your diet and you will see a huge increase in your overall health.  Quinoa, Millet, Teff, Amaranth and yes, Whole Wheat.  And any of the Wheat family of grains.  Spelt, Kamut, Oats, Barley etc.  And despite what the TV commercials say, Cheerios are not whole grain.  They have more sugar than you should be eating. 

Number Three:  Fresh Organic Vegetables, raw, or lightly cooked.  Do I really have to explain this one?

Number Four:    Water   Drink a lot of it every day.  If your urine is yellow, you are not drinking enough water to be healthy.  Drink at least a gallon every day.  Soda is not water.  Juice is not water. Coffee is not water.  Water is what your body needs, fill your body's needs. 

Number Five:  Vitamin C and Vitamin D  Take more than RDA.  Take 4 or 5 grams Vitamin C daily

Number Six:  Extra Virgin Olive Oil.  The finest product for your skin, liver, happiness.

Number Seven:  Yogurt and other Fermented Foods   We know that you have a lot of bacteria living in your digestive system.  It is a part of you, and a big part too.  Consuming the SAD kills off some of the bacterial flora.  If you don't replenish it with good bacteria, then you leave yourself open for BAD bacteria to grow there.  Put the good ones in and you will be better off.  Make your own fermented vegetables, Kim chee, sourkraut, etc are all good.  Yogurt, Kefir, miso and others are very good.

Number Eight:  Whole Fruit, never juice.  What's the point of juice?  Eat the whole thing and get more benefits, fiber, all the vitamins everything.  Not just juice, and especially bottled processed juice is pretty much devoid of benefits.

Number Nine:  Popcorn   Why not, I love it, it is NOT Genetically Modified in any way, and it is full of fiber, fun to eat and mighty tasty.

Number Ten:  Wine. Well, and maybe good beers.  Proven health benefits.  And good taste as well.  And okay, we can put chocolate in here as well.

dum dah dah da! Top ten things to avoid eating

I thought this would be a good thing to put out into the universe.  I know that there is a lot of confusion out there about what is good for you, what is bad, and what is downright toxic.  So, here today, I thought that this would be a good time to list the top ten things to avoid.  Well, the top ten things to avoid according to Chef Roy. Take it for what it is, but those that read my blog will know that there is scientific evidence backing up all my claims.  So, here we go,

Number One:  Canola oil  see my entry Canola Oil, the scary story  Forget the scary internet hype, the truth is that the eurycic acid content has been shown to be harmful, very harmful.  At 2% the level is dangerous enough to cause degeneration of brain tissue, as well as heart, liver, kidney and the pancreas.  Effects are cumulative, not transient.  Meaning when you eat foods containing eurycic acid, it accumulates in your body and is not eliminated as solid or liquid waste.  People that consume large amounts of foods fried in canola oil, or made with hydrogenated canola oil are at seriously high risk for degenerative illnesses and ALS type brain disorder symptoms.  And at this time, that's all we know for certain, more research is needed.

Number Two:  Bleached and/or Bromated Flour   It is bad enough that millers put chlorine in flour, but they also put in potassium bromate.  Bromine, the end product when bromate is heated during the baking process, is extremely toxic.  The US is just about the only industrialized country that allows the use of this cumulative neurotoxin in our food supply.  The FDA took action years ago, they asked for the bakery industry to voluntarily stop using it. 

Number Three:  High Fructose Corn Syrup:  I think enough has been said about this stuff in the media that most people should know how bad it is for our systems.  The media does not however report on the other bad stuff about it.  Like how much mercury is found in the stuff.  How mercury is found in soft drinks that use it.  And also now the newest threat to health comes from HMF  my blog has a lot about this new stuff and you can read it here. Number Four:  Artificial Sweeteners and all those labeled "All Natural"  Wow, where to begin.  Apartame, Sucralose, Nutisse, Truvia, Agave.  All bad, all have their own entries here on my blog. Sweeteners - Aspartame/NutraswSweeteners -- Sucralose/Splend, Truvia/Nectresse "NATURAL" Sweeteners?,  and a Sweet and Dirty Little Secret -- Agave    

Number Five: All Genetically Modified foods   So much has been written here on my blog, and in reality, all over the internet and in scientific publications world wide that little explanation is needed.

Number Six:  Soy products.  Hard for some people to hear, what with all the hype about it being nature's perfect food.  It isn't, too many anti nutrient properties, the hormonal imbalance it causes and just the fact that nearly all soy is GM. 

Number Seven:  Commercially Raised Meat  No body wants to hear that, but it is true, commercial farming practices are the cause of antibiotic resistant bacteria, the lowering of the age of puberty in humans, the increase in cancer, heart disease and who knows what else.  We need to try to remember that all of the toxins in our food supply, BT toxin, herbicides, pesticides, heavy metals and even hormonal agents are all CUMULATIVE.  Just like mercury in the top of the food chain, swordfish and large tuna, all that crap goes into cows, pigs, chickens and then into us in concentrated form.  Plus, holy cow, I mean a dedicated vegetarian like me will eat organic grass fed beef and pastured organic chicken because they TASTE BETTER.  And don't get me started on Berkshire pork.  It's worth the price.  But, limit or eliminate commercially raised meats and you will feel better, and in the long run, probably delay or remove the probability of cancer.

Number Eight:  Spice mixes containing Silica or any other "anticaking agent"  What, why?  Because most of them are little more than ground glass.  Make your own spice mixes.  Recipes on my cooking site, and all over the internet.  Yes, you can even make "BAM"

Number Nine:  Farmed Fish, shrimp, salmon etc.  Not shellfish like muscles, clams or oysters.  But definitely shrimp and salmon.  Again, those poor critters are fed factory made food from questionable sources.  And it makes this stuff just like commercial meats.  With one exception, salmon. Since consumers won't buy white salmon, Swiss chemical giant Hoffman La Roche synthetically produces canthaxanthin and an astaxanthin called Carophyll Pink from petrochemicals and provides salmon farms with -- SalmoFan.  Again, any toxins in their diet accumulate and make eating their flesh all the more toxic to humans.  

Number Ten:  Pretty much anything from China.  Well, isn't that harsh.  NO!  It is just common sense.  China has a pretty poor record for food production.  Questionable manufacturing practices, high pesticide residues on organic produce, the FDA sampling less than 1% of imports, huge recalls, the ban on all Chinese fish, and well, just a whole host of reasons, not the least of which is just that buying local makes sense in today's economy.  Spread some of your food dollars out to local people, don't send it off to big corporate agribusinesses or off to foreign companies.  We all need to do more of that, if we did, then maybe our economy really would start to recover instead of in the midst of huge layoffs, plant closings and a huge increase in menial minimum wage jobs with our governmental overlords spouting off about how the economy has improved, maybe it really will.  

So, to recap, Chef Roy has way too much time on his hands and says things that for most people are just finding hard to comprehend .  I wish that all this stuff was just a figment of my imagination.  I desparately want to live a long and healthy life free from cancer and degenerative diseases.  I want my child, and my other relatives to produce healthy babies that grow up and have long happy lives as well.  I fear that the way the world is deteriorating, it won't happen.  Truly, I believe that Monsanto is the cause of the demise of our civilization.  And that within 20 years, the birth rate will be near zero, and 90% or more of the population will be dying from horrific problems all tied to GM, pesticides, herbicides and antibiotic overuse.  Crop failures will be commonplace and two thirds of the world's population will be in starvation mode.  Pretty scary, but unfortunately, all too true.

Troubled future for the human race from Roundup

Glyphosate.  The actual chemical compound in the hugely profitable for Monsanto, Roundup.  It has one job, and one job only.  Kill weeds.  Monsanto tells the unsuspecting world that this farm chemical is harmless, and breaks down into non-toxic compounds after being sprayed on crops and killing off the offending weeds.  But, like so many lies that Monsanto has told the world, this one is indeed, just a lie.  The French government is the first to take action and took Monsanto to court and forced them to stop advertising that Roundup broke down to harmless compounds.  And the French won.  None of the information, ads, spec sheets, or anything from Monsanto about Roundup contains any wording that states that the stuff is harmless.  Well, at least in Europe.  Not so here.  Right on the product spec sheets you can download from the Monsanto website it states that the product breaks down and is non-toxic.  (handbook)
But what really happens to the stuff, and, more importantly, what happens to humans, the final consumers of plant material that get sprayed with ever increasing amounts of glyphosate.  Well, from Université de Caen Basse-Normandie in France we find that glyphosate disrupts the endocrine system.  It is in all probability the main cause of reduced male fertility as it decreases the production of the hormone testosterone.  It also kills teste cells.  (teste)  And now the scariest part of this report, " the presence of glyphosate in urine samples of Berlin city residents at 4-20 times the level allowed in drinking water (o.1 micrograms per litre, or 0.1 parts per billion (ppb)) . American consumers exposed to glyphosate through residual levels in genetically modified (GM) foods are likely to have even higher levels in their system; although no studies appear to have been done."

Don Huber, Emeritus Professor at Purdue University and senior scientist on USDA’s National Plant Disease Recovery System, has been a plant physiologist and pathologist for over 40 years (Huber)
In a letter to Secretary of Agriculture Tom Vilsack he states " the discovery of a microscopic pathogen that appears to significantly impact the health of plants, animals, and probably human beings. Based on a review of the data, it is widespread, very serious, and is in much higher concentrations in Roundup Ready (RR) soybeans and corn-suggesting a link with the RR gene or more likely the presence of Roundup."  and that " could result in a collapse of US soy and corn export markets and significant disruption of domestic food and feed supplies. On the other hand, this new organism may already be responsible for significant harm"

More research needs to be done to discover if this new pathogen has mutated from existing microbes or if they have mutated a a result of the presence of the Genetically Modified RR genes in the corn, soy and of course, now lots of other food plants.  The question is, who should pay for that research?  And more importantly, who should pay to clean up the environment if it is found that glyphosate and GM plants are causing the sterility of the human race and other, as of yet undiscovered problems.  If glyphosate is found to be in the water supplies of most cities in America, will Monsanto pay for distilled drinking water for every resident in the United States?  Personally, I believe that Monsanto has dispersed enough money into the pockets of politicians that they will emerge unscathed from any findings showing that ANY of their products cause environmental harm.  Americans have proven themselves to be susceptible to the high advertising budgets and lies that Gene Tech companies, chiefly Monsanto, are allowed to foist upon the American people.  ie, California labeling of GM foods.  If Monsanto continues to tell the world that glysphosates break down into non-toxic compounds; if farmers are forced to buy and spray ever increasing quantities of glyphosates into the environment; then Monsanto should be held responsible for the problem that they create and thesy should not be allowed to escape their culpability for these problems.   

Monsanto is pretty adept at escaping culpability for their messes.  DDT, PCB's, Agent Orange are just a few of the environment disasters foisted upon the world and of which Monsanto was forced to pay, well, actually, very very little, to help clean up.  Again, money in the hands of politicians goes a long way to getting out of paying for your lies and poor testing of products before putting them into production.  The reality of the situation is of course that as research discovers more and more of the problems associated with Genetically Modified plants, we need to at the very minimum, label GM foods so concerned consumers can have a choice, and the ideal situation is that ALL GM plants are removed from the markets, glyphosates are removed and big agribusiness farms are forced to adopt sustainable farming practices.

The NFL is non-profit? I know my life is!

Not exactly a food related blog today, but one that does show how ridiculous our government is.  This is not just me, this actually comes from a very interesting publication authored by Senator Tom Coburn, the junior senator from Oklahoma.  You can read the entire report here  "Report"    Or I can give you some of the highlights.

First off, the NFL, the PGA and the NHL are all registered as not for profit entities with the IRS so that they do not have to pay an estimated 91 MILLION dollars in taxes.  The NFL alone has an estimated 1 billion dollars in assets and has never paid any taxes since the sixties.  I don't have any money, maybe I should look into being not for profit.   Rats, that won't work, you have to make a billion dollars a year to be considered not for profit.  Just being broke means you have to pay more taxes than the rich do.  

The year 2012 was the most unproductive ever for Congress.  They did less than most high school student councils.  Some of the really cool things that they did take credit for include:

Oklahoma kept the Murray State Park Airport open even though only 1 plane a month on average lands there.  It was kept open in order to keep federal money coming in.

NASA spent 947,000 dollars on developing food to serve on Mars.

California researchers got 325,000 federal dollars to build a mechanical squirrel that they call "RoboSquirrel" that they use to find out why rattlesnakes miss their strikes when a squirrel is wagging its tail over when not wagging.  Money well spent.

The USDA (oops, there is a food connection) spent 325,000 dollars to promote caviar.  At up to 400 dollars an ounce, it is the perfect food for ALL Americans.

The National Science Foundation used 30,000 in Federal Grant money to show that students can accurately determine if a person is gay or not by looking at their facial features.

Sargeant's pet products received 505,000 dollars for capital improvements to make dog shampoo.

The USDA and Department of Commerce is spending 1.3 million dollars to aid Pepsico, one of the top 100 largest companies in the country, to open a Greek yogurt shop in downtown New York

Purdue University researchers used part of a $350,000 National Science Foundation grant to examine the benefit golfers might gain from using their imagination to imagine the hole being larger.

sheesh, it is getting late, I need to do some stuff, bake bread, work on another batch of my home made kimchee, brush my teeth, bend over, stretch, look directly at the sun until my retinas burn, and really, do just about anything other than think about how much the Federal government wastes.  The stupidity of government is epitomized so eloquently by one of its own, and you can indeed read all of the top 100 wasteful projects as defined by Senator Tom Coburn here  "Report"

It is a failure on a microbiological level

Well, it has happened, and the top scientists at Monsanto are stumped.  The wonders of Genetically Modified plant technology has in fact FAILED.  Miserably.  The hope and HYPE was that when gene tech guys started to inject BT insecticide genes that through trial and error were extracted from bacteria, and then put into corn plants.  These plants were to be the solution to the world's problems.  Able to grow and produce larger yields with virtually no applications of pesticides, the huge increases in those yields was to be the answer to the burgeoning population. 

That was the hope.  That is the failure.  Genetically Modified corn, soy, cotton, potatoes, squash, broccoli, and others that are on the market, or part of the over 700 plants waiting to be put into production; are obsolete.  As well as harboring potentially deadly side effects for we humans that ultimately consume them all.  The problems stem from the fact that insects have eaten the BT crops, a lot died, but some survived.  And those bred with each other, and now their offspring are able to consume BT crops with impunity.  Gene tech scientists are scrambling to figure out why.  I guess that getting a degree in gene technology never included classes in basic biology that described the process of evolution.

The latest research, a lot going on right here at the University of Arizona, is directed at changing the action of the BT toxin itself.  Researchers are attempting to change the amino acid that attacks the intestines of the insects.  What they found however, was the opposite. Modified Bt toxin provided ‘little or no advantage’ against pests with mutations, while increasing Bt potency in pests where resistance was independent of (desired) mutations. in their report, these modified toxins despite the authors conclusions that ‘insects can probably adapt to modified Bt toxins used alone, or in combinations with other toxins’. This study exposes the lack of scientific understanding of Bt resistance as well as our inability to control it. As researchers search for ways of delaying resistance, resistance is evolving in the fields.     source 

This post so far is just expressing one aspect of the Genetic Modification failure.  It is a pretty important one.  In the past, this has been the MAIN selling point for GM technology.  It still is.  And it doesn't work.  What does seem to work though is that new research shows that BT toxin is not broken down by the human digestive system.  In fact, it is absorbed into the human blood stream, and passed into unborn babies as well.  So far, there hasn't been any research done to find out what BT toxin does to humans.  The only thing that is certain is that the promises made by Monsanto in 1996 that BT toxin would never be absorbed by humans was incorrect.  

 Insects are a part of the natural order of life on this planet.  There are farming methods that don't rely on GM plants, or on the use of heavy applications of pesticides, herbicides or artificial chemical fertilizers.  Modern farming methods, also referred to as "monoculture" is incredibly destructive to the environment.  It is a magnet to insect pests, provides no protection for diminishing weed growth and destroys soil fertility.  Sustainable farming techniques are the basis of organic farming.  They rely on planting a variety of crops interspersed in sections within plots to discourage insects, crop rotation to rejuvenate the soil, and numerous other techniques to increase yields and minimize detrimental and poisonous modern methods.  And all can be planted, cultivated and harvested using modern equipment even though detractors state that organic farming MUST all be done by hand.  But then again there are a lot of lies spouted by modern techno companies.  Kind of like my ex-wife.

What happens in American homes! Well, the FDA

As a youth growing up in the fifties, it seemed as though we were living this carefree existence that was not unlike the lives of those we watched on the old black and white TV every evening.  Uncle Milty dressed up in a dress, (I had a lot of neighbors in Austin that did the same thing) the Cleaver boys got sent to their rooms after doing bad things, and Huntley and Brinkley made moms everywhere sigh dreamily.  Other than those pesky Ruskies causing the incredibly stupid duck and cover drills in every school in America, life was pretty idyllic.  Number one cause of death back then, heart disease.  Not surprising, I, like most everyone else, enjoyed the meat eaters diet along with the best the Western World could provide.  White bread, white rice, minute rice, canned vegetables and a huge artery clogging array of meat products.  Yeah, people got cancer, but just like the crazy uncle that smelled bad and took his clothes off and sat on his porch talking to a tree, nobody talked about it.
Since 1950, the overall cancer rate in the population of the United States has risen 44%.  The incidence of breast cancer and male colon cancer by about 60%; testis, prostate and kidney by 100%; and other cancers, such as malignant melanoma, multiple myeloma and some lymphomas, by over 100%. (1)

America has the highest rate of cancer in the world.  As of today, we see that 1 out of 2 American men and 1 out of 3 American women are expected to develop cancer.  Quite a change from when I was growing up.  Now 1 out of 8 women get breast cancer, and of those women, 1 out of 10 who get breast cancer can be linked to genetic causes.  That leaves 9 out of 10 attributed to environmental factors.  (2)

What happened?

The FDA happened, that's what.  The FDA was created to shepherd the food supply of Americans and to prevent contamination and adulteration of fresh and processed foods.  I think that most Americans truly believe that the FDA exists to protect us from dangerous additives, farming practices and poorly processed food products.  Well, it isn't true.  Today, the FDA is overworked, understaffed, and concerned more with taking payoffs and positioning themselves with future jobs in private industry than they are with the concerns of the people whose livelihood they are mandated to protect.  I know that sounds harsh, but their track record speaks for itself.  The numbers of questionable additives to our foods, and into livestock is the highest in the world.  The FDA has taken the philosophy that differs from the rest of the world.  Most other countries look at additives and do not approve them unless they are proven completely safe.  The FDA instead approves new additives on the basis that at that time, they haven't been proven dangerous.   And even then, if the additive makes tons of money for the manufacturer, then forget about getting rid of it.  Case in point--

Aspartame.  " Dr. Woodrow Monte, who authored the journal article “Aspartame, Methanol and the Public Health” wrote: "...think twice about taking it with your breakfast cereal. Aspartame or Equal, the controversial sweetener virtually forced down the throats of the American FDA by the notorious former US Secretary of Defense Donald Rumsfeld (the president of the company that produced it), turns into Formaldehyde inside your children's bodies. It is well known aspartame or Equal (E951/951) turns into wood alcohol when it is consumed, however, few people realize this wood alcohol morphs into formaldehyde in the cells of the human body. Formaldehyde is a Class 1 causing agent (the world class of carcinogens) and is responsible for everything from sick house syndrome to birth defects."  And   " toxicologist Dr. Adrian Gross told Congress at least one of Searle's studies "has established beyond any reasonable doubt that aspartame is capable of inducing brain tumors in experimental animals and that this predisposition of it is of extremely high significance."  (3)

I could go on and on about how the FDA is making people sick, and in truth, I have.  (see most of my entries on this blog)  But what good will it do.  It won't change the FDA.  What I hope will happen is that you will begin to look at the ingredient list on everything you buy.  Then look up those additives on the internet.  Bread doesn't need potassium bromate in it!  The stuff is poisonous.  the US is the only country in the world to allow it to be consumed.  Look at everything you buy.  And then tell your friends.  If we, as informed consumers stop purchasing the crap that is presented to us as healthy foods, then perhaps they will stop making it and start making the foods that they are capable of making.  Ones that truly are nutritious, promoting health and vitality.  It is possible, the rest of the world does it.  The Ruskies no longer are a threat, we ourselves are our biggest threat to our health and livelihoods.

Where is the FDA at when it comes to deceptive advertising?

Should big businesses be allowed to advertise their products as healthful and being able to promote joint and bone health, enhance the musculoskeletal system, prohibit age related eye diseases, reduce the risk of chronic diseases and supports optimum immune function.  If those big businesses are selling apples, or maybe carrots, whole and unadulterated, then yes, they should be allowed to advertise all those claims and proudly print that stuff on the labels.  But if you are making VitaminWater, and putting all of these very same health claims into your advertising and printing the same unproven lies right on the bottles; well, no. The marketing and business model for this product is incredible.  The good wholesome folks at CocaCola, are once again making literally hundreds of millions of dollars on this product with their ads and labels that promise health and vitality and in fact give you crap.

I don't want to be deceptive about their stuff, so I went to Vitaminwater.com and went to try to download the nutritional info on one of the flavors.  Oh, the nutritionals are only available to those people in the US.  (says so right on the website)  I started to download the pdf file that is only 3.7 MB.  These guys have it set up so that it takes 24 minutes to download the file over a high speed connection.  They don't want anyone looking at it.  I could have gotten into the van and driven to the QT and bought a bottle in the time it took to download.  The file is two pages.  It lists the nutrient content of each product, and in the tiniest print imaginable, they show the ingredients.  At 200% magnification I was able to read the ingredients.  Water, Crystalline Fructose, Cane Sugar,  and then less than .5% of a few vitamins.

In 2010 the Center for Science in the Public Interest, the CSPI, a wholly independent group funded by consumer support, filed a lawsuit against Coke stating that they used deceptive advertising and marketing practices to sell this sugar water to the public.  In their lawsuit CSPI nutritionists state that the SUGAR content of the stuff more than offsets ANY purported health benefits.  They state that this is part of what is called the "Jellybean Rule" wherein because a jellybean has no cholesterol, therefore it is good for your heart.  CSPI states that Coke cannot deceptively state that a product, in this case Vitaminwater, on the label and then on the back of the label list the ingredients that show that the health claims are indeed false.  And that just because Coke lists the ingredients does not indemnify them of responsible advertising and marketing.  The judge that heard Coke's motion to dismiss the lawsuit in an INCREDIBLY fantastic decision stated that he saw evidence to proceed with the lawsuit.  He also stated that although the FDA frowns on advertising that promotes one ingredient to the exclusion of more prominent ingredients, in this case sugar.  The judge also stated that there was enough evidence that Coke violated FDA regulations by making health claims about Vitaminwater even though it does not meet required minimum nutritional thresholds, by using the word ‘healthy’ in implied nutrient content claims even though Vitaminwater’s fortification does not comply with FDA policy, and by using a product name that references only two of Vitaminwater’s ingredients, omitting the fact that there is a key, unnamed ingredient [sugar] in the product,”

Whew.  Two things about all of this scare me.  And also make me happy.  First, that Judge Gleeson points out that the FDA frowns on deceptive advertising.  FROWNS?.  The second, all of those products on the shelves of supermarkets that market themselves as having "Fruit" and have labels depicting fruit with their crap like waffles, yogurt, cereals and all kinds of other crap, in fact do not contain actual fruit, but "FRUIT BITS" .  Tiny bits of artificially created sugar, coloring, artificial flavoring, and in a few cases, tiny bits of dried fruit.  WHY?
The FDA is once again showing how well they are protecting consumers here in America.  Big business, big money.  It isn't as though the FDA has done anything to protect the interests of American consumers in the past.  Well, they have done a few things, like close down a peanut butter production facility that was so rampantly deteriorating as to have huge amounts of contaminants in their products as to sicken the inspectors.  But other than that, the real health hazards in our food system, GM food, toxic additives, grossly huge amounts of pesticide and herbicide residues, the proliferation of the use of antibiotics in mega farms and other SERIOUS health concerns are overlooked because big businesses are ready and waiting with HUGE amounts of CASH to spread out to governmental entities and elected officials.  Hmm. where do most of the directors and department heads of the FDA and USDA work once leaving government jobs?  Monsanto.  Which of the unbiased Supreme Court judges used to be lawyers for Monsanto?  Who used to be a lawyer for Monsanto and was specifically picked by Obama (in a GROSSLY confliction of interest) to be the nations food safety czar? 

The FDA has proven time and time again that their focus is not on the HEALTH of the Americans that they are entrusted to protect, but the WEALTH of the big agribusinesses that funnel MONEY into the pockets of anyone with the power to make decisions.  It is never going to change.  EVER.  Money talks louder than the needs of citizens.  What can change is that you, me, everyone out there, begins to recognize what is going on in the world and stands up against big business.  Shop at farmers markets, don't buy crap anymore.  ASK the grocery managers if the zucchini they have on sale is GMO or non-GMO.  If they don't know, tell them you won't shop there until they know what they carry.  And do it loudly in public.  Alert your friends to the threat to their lives and their very health and well being if they continue to spend their food dollars on toxins and poisons.  We have to care enough about our own health to take action, our government does not give a rat's ass about you at all.  Think about it.

What to do to make a difference

Have I made a difference?  I don't know, I think that I have influenced a few people, made them think differently about food a bit maybe.  Yesterday, after spending the better part of the day walking around the Fountain Hills Arts and Craft Fair, I met up with Karrie and her luckiest guy in the world fiancee, Jay for a couple beers and conversation.  Karrie, has made a difference.

A few years ago she and her parents, who are both Healthcare Professionals, got together and spent a lot of time getting donations of medications and medical supplies and then they went to Kenya.  There they went way out past civilization and helped out at a remote medical aid station.  They treated the native people for a host of basic medical needs, and helped in ways that are unimaginable to most of us.  And they volunteered and paid for most of the trip themselves.

The one thing that Karrie told me was the most haunting thing that they did there was when these parents had walked over 60 miles with their 18 year old son with them in a wheelbarrow.  The boy had years earlier started off with a large tumor on his wrist, which the village medical person cut off with a hack saw and then bandaged with banana leaves.  A couple years later, he grew an even larger tumor on his elbow, which was treated in the same way.  Now, at manhood, he had tumors on his face, shoulders and in his neck.  These tumors had grown into his neck to the point they interfered with his breathing and left him unable to talk.  And in a great deal of pain.  Incapable of walking they hauled him there in the wheelbarrow.  The prognosis, was not good at this little facility in the middle of nowhere.  The parents were understanding, and just asked to help them alleviate his pain and help him to pass from this morbidly painful existence, into the next.  They did.  And the long suffering youth left the life that he had known for so long and in the presence of his loving parents he passed over.  Then they wheeled him back home to be buried.

What must it take to ask for the means to provide a son a quick and painless death.  To watch your own child grow up, with horrifyingly debilitating health problems, and to know with certainty, that there is no hope for any sort of cure.  What must go through the minds of those parents.  And certainly, it isn't just the parents living out in the bushlands of Kenya, or other remote places, but here, today, in modern society.  There are unfortunately large numbers of ailments that destroy life, and modern medicine is unable to provide any long term solution.  It happens all too often, and without the simple defining answer that the couple in Kenya received.  As doctors practice their profession, they make life miserable for a whole host of patients that they know that there is no hope for.  But continue to prolong the agony because no one wants to take a stand and to provide the type of final care that some, Dr. Kevorkian for example, provide.

Well, that was a deep subject for today's blog entry, one that will hopefully make some of you think hard and long, and maybe, just maybe, one more person out there will volunteer and do what my wonderful friend Karrie and her parents did once a few years ago.  We need more people in the world to make a difference, and not like me that just makes you think about what you eat.

The White House-Do what I ask, don't look at what I do!

Walter Scheib is the man to ask about whether or not the man in the highest office in the country eats the same things the rest of the people do or not.  He was Executive Chef of the White House.  In his interview for Mother Jones News, he stated,
"From 1994 to 2005 I was the executive chef at the White House. This offered me not only the personal honor of serving two unique and interesting first families, but the professional challenge of fulfilling Hillary Clinton's mandate of bringing contemporary American cuisine and nutritionally responsible food to the White House."
"This meant that nearly all the product used was obtained from local growers and suppliers. There was a small garden on the roof of the White House where produce was grown. The ethic of the purchasing and the cooking at the White House under my direction and under the continuing direction of [current Obama White House executive chef] Cris Comerford is one of respect for the pedigree of the product and manner it is grown, gathered, raised or caught."
"The Clinton and Bush families dined regularly on organic foods. Both wagyu and grass-fed beef were frequently used."

Sam Kass's title is assistant White House chef and food initiative coordinator.  He is the guy that cooks primarily for the first family while the the White House chef, Christeta Comerford, primarily takes care of the more formal events.  Once he came to the White House staff in 2008, he was a bit of a thorn in the side of the president's drive to help big agribusiness make money to the exclusion of health of Americans.  Mr. Kass made this statement on his blog-

“We find ourselves in a fight to salvage a food system that has been ravaged by an approach of quantity over quality,” he wrote. “The industry our society has built around food is harmful and unsustainable.”

Well, isn't that interesting.  As the last three presidents have received huge amounts of cash from big agribusiness firms  have championed the biotech companies and helped to push through blanket approval of most genetically modified plants, and of course, the huge increase in agricultural chemical use; they themselves have stayed as far away from the food that is produced by their very actions.  They have in fact turned to the organic lifestyle.  If the food that they want all Americans to have available to Americans isn't good enough for them, why is it good enough for us?  Are they, the Obamas, the Romneys, the heads of the biotech companies all aware of something that they do not want us to know about?  Maybe they already know about the research that shows how long term toxicity of GM foods will cause kidney, liver, reproductive failure and degenerative brain disorders and therefore distance themselves from the very food that they championed.   Is it because they want desperately to be the breeding stock that is available to repopulate the world after we, the peons of America, the riffraff, all die off?  something to think about.

Info on the FDA

I did not write this, I have copied it, with their permission, from www.naturalnews.com.  But it definitely addresses the things about the FDA that I feel.  It was written to garner interest in the incredibly stupid Senate bill 510 that was passed back in 2010.  Everything there is still descriptive of the FDA and their tunnel vision of America.  Hands out begging for all the more cash from agribiz they look toward citizens as disposable.  The picture at the bottom was inserted by me.

Here are the ten biggest lies that have been promoted about S.510 by the U.S. Congress, the food industry giants and the mainstream media:

Lie #1 - Most deaths from food poisoning are caused by fresh produce

Here's a whopper the mainstream media won't dare report: Out of the 1,809 people who die in America every year from food-borne pathogens (CDC estimate), only a fraction die from the manufacturer's contamination of fresh produce. By far the majority of food poisoning is caused by the consumption of spoiled processed foods, dead foods and animal-human transmission of pathogens.

For example, one of the largest food-borne killers according to the CDC is Toxoplasma gondii, a disease that people acquire from cat feces coming into contact with their food, which can happen right in their own homes (http://www.cdc.gov/ncidod/eid/Vol5no5/mead.htm#Table%203). Salmonella poisoning accounts for 553 deaths a year. As a reference for relative risk, over 42,000 people die each year from road accidents in the USA, meaning driving a car has a roughly 7600% higher chance of killing you than eating fresh produce. In terms of food-borne illness, many of the deaths come from things like spoiled tomato sauce, spoiled canned foods and spoiled pasteurized milk. S 510, of course, does absolutely nothing to address these food contamination deaths, since those foods are considered "sterilized" at the time of sale.

Lie #2 - Under S.510, the FDA would only recall products it knows to be contaminated

Not true. S.510 merely requires the FDA to have "reason to believe" a food is contaminated. So right there, that means all raw milk will be targeted by the FDA because even without conducting any scientific tests at all, the FDA can say it has "reason to believe" the milk is contaminated merely because it is raw.

In other words, the FDA no longer needs science to outlaw a food product. It merely needs an opinion.

Is this "reason to believe" section really true? Yep, and here's how it was amended:

SEC. 208. ADMINISTRATIVE DETENTION OF FOOD.
23 (a) IN GENERAL. - Section 304(h)(1)(A) (21 U.S.C.24 334(h)(1)(A)) is amended by
(1) striking ''credible evidence or information indicating'' and inserting ''reason to believe'';

In other words, in negotiating this bill, the U.S. Senate removed the requirement that the FDA needed "credible evidence" in order to recall a product and, instead, replaced that with the FDA only needing "reason to believe."

It is utterly amazing that the U.S. Congress would give the FDA to conduct large-scale product recalls and even imprison people based entirely on what the agency "has reason to believe."

Last time I checked, the FDA held some pretty bizarre (if not downright moronic) beliefs, including this jaw-dropping whopper: The FDA literally believes that there is no food, no herb, no vitamin or supplement that has any ability to prevent disease of any kind. They don't even believe limes can prevent scurvy, and you'd have to nutritionally illiterate to believe that.

The FDA believes foods are inert and that all the amazing phytonutrients in those foods (carotenoids, antioxidants, therapeutic fats like omega-3 and so on) are utterly useless for human biology.

This belief, held by the FDA that has now been put in charge of the food supply, is the belief system of an insane government agency that has completely lost touch with reality while abandoning nutritional science.

Lie #3 - They didn't tell you that nearly 70% of grocery store chickens are contaminated with salmonella every day

Yep, it's true: Amid all the fear-mongering over salmonella, everybody forgot to notice that the vast majority of fresh chickens sold at grocery stores every single day are widely contaminated with salmonella (http://www.naturalnews.com/028661_chickens_salmonella.html). Yet S 510 does absolutely nothing to address this. It's not even mentioned in the bill.

In fact, it is these contaminated chickens that end up cross-contaminating the fresh produce in many kitchens across America. So the so-called "food poisoning" that's often blamed on spinach or onions often originates with the contaminated chicken meat people bring home and slice on their kitchen cutting boards.

Lie #4 - S.510 will exclude and protect small farmers

The Tester Amendment, which was finally included in S.510, excludes farmers who sell less than $500,000 worth of food each year from the more onerous paperwork and compliance burdens described in the bill. But this dollar amount is not indexed to inflation, meaning that as the U.S. dollar continues to lose value due to the Federal Reserve counterfeiting machine running at full speed (more "quantitative easing," anyone?), food prices will continue to skyrocket -- and this will shift even small family farms into the $500,000 sales range within just a few years.

In fact, a single-family farm with just four people could easily sell $500,000 worth of fresh produce a year right now, even before inflation. Remember, $500,000 is not their profit, but rather the gross sales amount. The profits on that might be only $50,000 or even less.

Furthermore, this $500,000 threshold means that small, successful farms that are doing well and would like to expand will refuse to hire more people or expand their operations. To avoid the tyranny of S 510, small farms will try to stay small, and that means avoiding the kind of business expansion that would create new jobs.

Lie #5 - The FDA needs more power to enforce food safety

The FDA already has the power to effectively recall foods by publicly announcing a product has been found to be contaminated. The FDA already has the power to confiscate "misbranded" products, too, and it could easily use this power to halt the sale of contaminated food items.

But the FDA simply refuses to enforce the laws already on the books and, instead, has sought to expand its power by hyping up the e.coli food scares. The ploy apparently worked: Now in a reaction to the food scare-mongering, the FDA is being handed not just new powers, but more funding, too! And you can bet it will find creative new ways to put this power to work suppressing the health freedoms and food freedoms of the American people.

Lie #6 - Fresh produce is contaminated because of a lack of paperwork

There is no evidence that requiring farms to fill out more paperwork will make their food safer. The real cause of produce contamination is the existence of factory animal farms whose effluent output (huge rivers of cow feces, basically), end up in the water supply, soils and equipment that comes into contact with fresh produce.

The food contamination problem is an UPSTREAM problem where you've got to reform the factory animal operations that now dominate the American meat industry. S.510, however, does absolutely nothing to address this. Factory animal farms aren't even addressed in the bill!

Lie #7 - The American people are dying in droves from unsafe fresh food

The truth is that Americans are dying from processed food laced with toxic chemical additives, not from fresh, raw produce. Partially-hydrogenated oils, white sugar, aspartame, MSG and artificial food colors almost certainly kill far more people than bacterial contaminations.

The American public is also dying from pharmaceuticals -- anywhere from 100,000 to 240,000 people a year are killed by FDA-approved drugs (http://www.naturalnews.com/001894.html), most of which have been approved under the guise of blatantly fraudulent science and drug company trickery. The FDA doesn't seem to mind. In fact, it has been a willful co-conspirator in the scientific fraud carried out by Big Pharma in the name of "medicine." To think that the FDA -- the very same agency responsible for the Big Pharma death machine -- is now going to "save us" by controlling food safety is highly irrational.

Lie #8 - The FDA just wants to make food "safer"

Actually, the FDA wants to make the food more DEAD. Both the FDA and the USDA are vocal opponents of live food. They think that the only safe food is sterilized food, which is why they've supported the fumigation, pasteurization and irradiation efforts that have been pushed over the last few years.

California almond growers, for example, must now either chemically fumigate or pasteurize their almonds before selling them (http://www.naturalnews.com/021776.html). This has destroyed the incomes of U.S. almond farmers and forced U.S. food companies to buy raw almonds from Spain and other countries.

Lie #9 - Food smuggling is a huge problem in America

One of the main sections of S.510 addresses "food smuggling." Yep -- people smuggling food across the country. If you've never heard of this problem that's because it's not actually a problem.

Not yet anyway.

But there's a reason why they put this into the bill: Because they're probably planning on criminalizing fresh produce and then arresting people for transporting broccoli with the "intent to distribute."

Yep, farmers bringing fresh produce to sell at the weekend farmer's market could soon be arrested and imprisoned as if they were drug smugglers. Hence the need for the "food smuggling" provisions of S.510.

Soon, we will all have to meet in secret locations just to trade carrots for cash.

Lie #10 - S.510 will make America's food supply the safest in the world

Actually, even with S.510 in place, America's food supply is among the most chemically contaminated in the world, second only to China. You can find mercury in the seafood, BPA in the canned soup, yeast extract (MSG) in the "natural" potato chips, and artificial petrochemical coloring agents in children's foods.

Eating the "Standard American Diet" is probably the single most harmful thing a person can do for their health. It's the fastest way to get cancer, diabetes and heart disease. Every nation in the world that begins to consume the American diet starts to show record rates of degenerative disease within one generation. This is the "safe food" that the U.S. Senate is now pushing on everyone.

Remember, with S.510, SAFE = DEAD. And the FDA says it wants to keep everybody safe.

A big loss for the health of our descendants

Well, it is done, the votes are in and the majority of the people in California have told big agribusiness that we as Americans do not want the same choices that the rest of the world gets relative to the poisonous Genetically Modified foods.

Yay.

With the September release of the first long term feeding studies showing that there is a definitive correlation with feeding GM corn to rats and their getting significantly higher rates of tumors, degeneration or liver, kidneys and brains; it is a good thing.  Of course it is due here as well, as India banned GM plants last week.  Most of the people in Europe are turning away from GM foods and they do not sell there.  It may take some effort, but eventually we here in American will ban them here as well.  The unfortunate thing is that it will take thousands and thousands of innocent people here dying from ALS type symptoms, huge increases in cancer, kidney failure, degenerative liver problems and other terrible consequences that are just now coming to light about these horrific abominations.  Genetically Modified plants, and salmon.   Just another way for Monsanto to make millions while killing humans.  Remember, Monsanto is quite used to litigation, the trillions of dollars of lawsuits that are expected from their poisoning of our food supply is just another drop in the hat to them,  Remember PCB's, Agent Orange, the violations of the Foreign Corrupt Practices Act, the French government nailing them for false advertising cuz Monsanto said Roundup was biodegradable and them froggy boys discovered the truth, that it isn't.  Sheesh, what else have they been hauled into court for, destroying the water quality with PCB and a whole host of other toxins in Broficin Quarry in Wales.
Of course there are the Monsanto filed lawsuits, those are unbelievable.  If a farmer is planting crops, like he has done for years and years, then at the end of the season if he keeps seed aside to plant again the next spring, that should be a normal thing to do right.  Not so, if the farmer's neighbor plants GM crops and our innocent farmer then has his fields contaminated with the pollen from his neighbors fields; then that farmer is liable for damages in the amount of any profit he might make because the plants he is growing have GM genes and Monsanto says they own them.  And they have sued farmers and won even though the farmers did not want the GM, never bought the GM and want to get rid of the GM plants.  But because of contamination by GM plants in nearby fields, they were screwed.  Doesn't seem right does it?  But then again if you are stupid and spill hot coffee in your lap, you can sue and get a million dollars.  Just another failure of our American way of life.  Or perhaps it is a failure of Americans to give a shit about anything other than fast food, diet cola, reality TV shows and sitting on their butts to watch them.

This truly is a story of Goliath once again winning in the battle and terrorizing the people living in the valley.  Only the valley is all of California, and now the whole country.  Yes, it is true, a million dollars a day in TV ads spouting out and out lies has brainwashed the Reality TV show watchers and those that went out and voted sided with Big Agribusinesses and now they have an unbridled ability to foist ever more toxic poisons on the unsuspecting (and apparently uncaring) public. 

I don't understand it.  GM foods are failures!  They have not brought the huge increases in output they were supposed to have.  They no longer fight off insects as the insects now have resistance to them.   Weed killers no longer are effective because the weeds are resistant.  The weed killer is now shown to not only not be biodegradable but accumulate in human tissue. The BT Toxin has been shown to NOT be broken down in the human digestive tract and the BT Toxin producing genes are now part of the bacterial flora in human guts and continue to produce BT Toxin in our own systems.  Newly released studies show long term ingestion of GM corn produces tumors and degradation of kidneys, liver and brain tissues.  And yet California voters don't care if they eat the stuff. 

The last three presidents only eat organic food.  This is from interviews with the last two white house executive chefs.  We pay for their food so they can.  Romney only eats organic.  His wife had MS and got better after switching to an organic diet.  I wonder if the board at Monsanto eats organic.  A million dollars a day spent to defeat Prop 37, and they make billions on poisoning our food, no, they aren't stupid enough to eat their own crap.

Help, I need somebody, Help, not just anybody! Help! We need a GM Superfund

I need to find someone with money to burn.  Someone that has the right attitude toward GM plants and animals.  A lawyer would be nice, but anyone with money would work.  I want to get a team off lawyers together and file a class action lawsuit against Monsanto and all the other gene technology companies out there.  I don't want the money, I want the money to go into a fund that will be used to help clean up the ecological disaster that they have caused.  Kind of like the big tobacco lawsuit, money into a fund for healthcare.  Here gene tech profits all go into a fund to help take care of the massive problems that we are just beginning to find.

To start, all the weed killer resistant weeds that exist. At this time, researchers have found 28 species of weeds or weedlike plants covering 16 families of plants that are not only roundup resistant but also Agent Orange resistant.  These weeds are resistant because farmers are CONTRACTUALLY required to use roundup on their crops when they plant GM plants.  It is required of them.  Monsanto and Dow along with DuPont bought up all the seed companies in the 90's and pretty much they only offer GM seed to farmers.  Their only option is to buy the GM seed, use the chemicals and say their prayers like the rest of the world hoping that all these lies told to them by GM tech companies are true.  Even though we are finding out that they really and truly are lies.

GM crops were supposed to increase the yields of farmlands with less work, less toxic chemicals and greater output.  Not so, this has been proven to be a complete and total fantasy.  The Department of Agriculture itself has found that the soybean crop from GM fields to be on average 15% less than non-GM crops.  Herbicide sales have skyrocketed.  And pesticide sales have gone way up as well, with the advent of BT toxin resistant insects now showing up everywhere.  The promise of less chemicals is just another fantasy as the natural world adapts to the horrors of GM technology.

Corn is Genetically Modified.  There is no non-GM corn anywhere in the world now.  High in the mountains of Mexico the native people there have been raising their native corn for over a thousand years.  Indigenous to that area, it was perfectly suited to conditions on the volcanic soil where it has grown and fed the people for generations.  GM corn is based on highly technolized corn plants.  Shallow roots, dependent on high phosphate chemical fertilizers; today's GM corn could not survive and flourish in nature.  Mexican corn is now infected with the genes from GM corn.  Five years ago scientists speculated that there would not be any non-GM corn left by 2018.  They were wrong, it has happened as of 3 years ago.  The corn pollen from GM corn fields is airborne and has drifted into the high Mexican mountains and destroyed the corn population there.  Now, the hybridized corn no longer grows freely in the rich volcanic soil, but withers without applications of high phosphate chemical fertilizers that the native people cannot afford to purchase.

In India, Monsanto convinced the government that BT Toxin cotton was the plant of choice as it is resistant to the boll worm and will increase the yields and cut the costs to the farmers.  Indian farmers planted thousands of hectares of the miracle GM cotton.  By the second year, boll worms had become completely resistant to the BT toxin and devastated the crops.  Crop yields have been less than 25% of previous yields and costs to the farmers have skyrocketed as now they not only have to pay for their seed, they have to buy high phosphate fertilizer and pesticides.  And to top it all off with yet another problem, when farmers allow their sheep to graze on the cotton stubble, as they have for years and years; the sheep sicken and die.  With no recourse, and bankruptcy, Indian farmers are committing suicide in huge numbers.  Over 25,000 have taken their own lives in total desperation.  The government of India just last week banned GM crops.

I've said this before, I will repeat it again here.  In 1996 when Monsanto went before Congress to get their BLANKET APPROVAL FOR ALL GM PLANTS, they testified that the genes inserted into plants will not, cannot, in anyway transfer to any other organism.  They lied.  Princeton researchers have found GM genes in the bacteria living in the intestinal tracts of human beings.  The bacterial flora that live within our systems is one of the main parts of our immune systems.  When our gut bacteria die, we have lots of problems.  If our gut bacteria suddenly begin to take on the characteristics of Genetically Modified plants, such as producing BT toxin, we have no studies as to what will happen.  However, in 1996, Monsanto scientists told Congress that BT toxin is harmless and is destroyed by the human digestive system.  They lied. Scientists have recently discovered BT toxin in the blood stream of human volunteers.  And the worst part, they found it in the blood of unborn fetuses.

Monsanto has NEVER done any long term studies on the effects of eating GM foods.  Someone else just did.  They fed a large number of rats a diet that consisted of 11% GM corn.  After 13 months, they sacrificed the rats and autopsied them.  They found tumors in their breasts and deterioration of the kidneys, livers and brains.  And they had pretty poor overall health before their deaths.  

I want that super GM fund to be there to help the Indian farmers.  To help the Mexican farmers.  And most of all, I want it to be there to help Americans that down the road find out that cancer, kidney disease, ALS type brain disorders are found to be caused by BT toxin, or some other unimagined problems that are found to be caused by Genetically Modified foods.
